Mogo, also known as cassava, is a root vegetable native to South America with a nutty, woody taste, and is particularly popular among those who grew up in Africa. Although mogo may not be common in most supermarkets, you can often find it in the frozen section. This recipe offers a simple yet flavourful way to enjoy mogo, turning it into crispy, seasoned batons that are ready in under 30 minutes. Perfect as a starter, this dish pairs wonderfully with a mint yoghurt dip and mango chutney.

Garlic Black Pepper Mogo Recipe

Equipment: Steamer or saucepan, fryer
Ingredients:
• 200 g Frozen Mogo (Cassava)
• Oil for deep frying
• 2 tablespoons Olive oil
• 8 cloves Garlic, chopped
• 1 teaspoon Salt
• 1 teaspoon Garlic powder
• 3 teaspoons Coarse black pepper
Instructions:
1. Prepare the Mogo: Steam or boil the frozen mogo for about 10 minutes until a knife can easily pierce through it.
2. Cut: Slice the mogo into thin batons, roughly 6cm in length and 1cm in width.
3. Fry: Deep fry the batons on medium heat until they turn golden and crispy.
4. Season: In a non-stick pan, heat the olive oil and fry the chopped garlic and coarse black pepper for about 1 minute.
5. Combine: Add the fried mogo batons to the pan, and toss them with the garlic powder and salt until well coated.
6. Serve: Enjoy hot, accompanied by mint yoghurt dip and mango chutney.
